Lomi lomi salmon is one of those iconic dishes you think of when thinking Hawaiian food. Introduced to Hawaiians by early Western sailors, this dish has evolved from it's more "traditional" roots. In old Hawaii, natives used various local fish - anything that was available - instead of salmon that is used today. Fish was salted for preservation and the name refers to the "massaging" of the ingredients that is essential to combining this delicious salad. Enjoy with your lau lau, kalua pork and side of poi... are you hungry yet? :)
1-1/2 lbs Tomatoes, small diced
8 oz Salted Salmon, small diced
1/2 Onion, small diced
1/3 Cup Akakai Green Onion, chopped
Add all ingredients to a mixing bowl.
Using your hands, gently lomi lomi (massage) the ingredients together until well combined.
Enjoy immediately or refrigerate until ready enjoy!
