Ana-Malia brought some of this amazing poke u'ala dish for us to try at one of our Pa'ina pickups. OMG! The Inamona, Hawaiian Salt and Sesame compliments the u'ala perfectly. Mahalo to this 16-year old student of Honoka'a High for sharing this incredibly delicious recipe!

Yield: 4-5 People
3lbs U’ala (purple sweet potato)
3TBL Sesame Oil
1TB: Hawaiian salt
2 TBL Inamona
2 TBL Chili pepper water
1/4 Cup Chopped green onions
In a pot add sweet potatoes and cover with cold water. Bring to a boil and reduce heat simmer till potatoes are steak knife tender (not too soft or else it will be mushy)
Drain and let cool down to a temperature manageable to hold potatoes in hand to peel and cut to poke size (cubed) pieces.
While still warm add all ingredients together at once and mix gently to fully incorporate all the flavors and not break the potatoes up too much.
*Tip: put together and mix everything while still warm to get all the flavor really into the potatoes. Also do not over cook the potatoes so they hold their cubed shape.
