Portuguese Sausage Tortilla Wraps

Country Flavah’s Portuguese Sausage is so yummy - I mean, you can fry it up alone and enjoy as it. But if you want to try something fun in the kitchen utilizing Portuguese Sausage, we have a recipe for you!

Who knew Portuguese Sausage and cotija cheese would be a match made in heaven! Add fresh veggies and it’s perfection. This recipe makes about two hearty wraps (when using large tortillas) but we’re sure you’ll be wanting more!⁣

  • 1 1/2 Cups of Country Flavah Portuguese Sausage (Cubed)

  • 1/4 Cup Green Bell Pepper (Diced)

  • 1/4 Cup Red Bell Pepper (Diced)

  • 1/4 Cup Onion (Diced)

  • 1/2 Cup of Cooked Potato (Cubed, we recommend boiling to soften)

  • Cotija Cheese to taste

  • 2 Large Flour Tortillas


  1. Prep and cut your fresh veggies including cooked (boiled) potatoes and sausage. Potato should be soft but not mushy.

  2. Place pan or skillet on medium-high heat. Once pan is hot, add Portuguese Sausage. Let the sausage simmer until oils begin to extract - about 1-2 minutes.

  3. Add onions and saute for about 30 seconds to a minute then add bell peppers. Allow ingredients to cook for another couple minutes while stirring periodically to prevent burning.

  4. Once bell peppers are softened and onions have caramelized, add potatoes. Turn down heat to medium and allow mixture to simmer for another 2-minutes or so.

  5. Remove pan from heat. Place fully cooked sausage mixture on the side and prepare your tortillas for wrapping.

  6. Spoon about half of the Portuguese Sausage filling onto the center of one flour tortilla. Be sure to keep mixture in the center of the tortilla to avoid overflow when wrapping.

  7. Sprinkle cheese over the mixture to taste - add as much or as little cheese as you desire!

  8. Fold over one end of the tortilla to cover the mixture and tuck, then fold in the two sides and continue folding. To see an example, watch the video above for a visual! Continue by rolling the second wrap with the remaining stuffing.

  9. Optional: place a clean non-stick pan or skillet on medium heat. Carefully place stuffed wraps on heat and toast for a minute of so. Flip to sear the other side. Once nicely toasted, remove from heat, plate and enjoy with your favorite guacamole, salsa or other condiments! (See our recipes for these items as well!)
